Mountain Apple Stuff Puppies

(Serves 6-8)
4 cups House-Autry hush puppy mix
2 Tbs. poultry seasoning
2 Tbs. rubbed sage
1 Tbs. fresh sage chopped, optional
2 apples
1/2 lemon, juiced
2 cups turkey or chicken stock

In a bowl, blend hush puppy mix, seasoning, and sage. Grate apples into the dry mix using a standard grater. Add lemon juice. Gradually add stock, stirring until batter is thick. Shape into two-inch balls. Allow to sit for 20 minutes before frying. Fry at 325°F for two minutes, or until cooked through. Pair with turkey gravy for dipping.
